Skopje is easier for vegetarians than you might expect. Macedonian cooking is built on beans, peppers, cheese, bread and fresh vegetables, so many traditional dishes are meat-free – and thanks to the Orthodox fasting tradition, most restaurants also know exactly what “vegan” means. Here is what to order and where to eat as a vegetarian or vegan in Skopje.

The magic word: posno
During Orthodox fasting periods (especially before Christmas and Easter) many Macedonians avoid meat, dairy and eggs. Food without any animal products is called posno (посно). Ask for posna hrana and staff will point you to fully plant-based dishes – very useful in traditional restaurants.
Traditional vegetarian dishes to try
| Dish | What it is | Vegan? |
|---|---|---|
| Tavče gravče | Beans baked in a clay pot with peppers and paprika | Usually (ask for the posno version) |
| Ajvar | Roasted red pepper and aubergine spread | Yes |
| Pinjur | Roasted tomato, pepper and garlic spread | Yes |
| Shopska salad | Tomato, cucumber, pepper and onion with white cheese | Vegetarian (vegan without cheese) |
| Polneti piperki | Stuffed peppers – posno versions use rice and vegetables | Ask |
| Burek with cheese or spinach | Flaky filo pastry | Vegetarian |
| Pržen kompir / grilled vegetables | Fried potatoes and grilled peppers, courgettes and aubergines | Yes |
